A few years ago at Jailhouse Brewing Co.’s chili cook-off, I made a chili that won second place! I have the trophy to prove it, too. I’ve made it a few times since then and receive a lot of compliments. On this chilly, rainy day, I figured it was the perfect day to release my chili recipe out into the world!


  • 2 pounds raw Bratwurst
  • 1 large can diced tomatoes
  • 1 can tomato paste
  • 2 cans of Black Beans
  • 1 large Sweet Onion, chopped
  • 1 Green Bell Pepper, chopped
  • 1 Yellow Bell Pepper, chopped
  • 1 Red Bell Pepper, chopped
  • 1 Cup Diced Celery
  • 2 bottles of beer of your choice
  • 2 Tablespoons Chili Powder
  • 1 Teaspoon Cumin
  • 1 Teaspoon Oregano
  • 1 Teaspoon Salt
  • 1/4 Teaspoon Cayenne Pepper
  • 1/4 Teaspoon Sugar
  • 3 Cloves Garlic

Remove Bratwurst from casing and Brown like you would ground Beef. Add raw vegetables and Garlic. Cook until Onion are clear. Add all other ingredients. Add water or more beer if needed. Some people like things a with a little more spice or heat. If this is you, add more seasoning to taste.

Simmer for an hour or more. Great for rainy days like today.

Serve with shredded Cheddar Cheese, Raw Onion and Tortilla Chips if you like.

Serves at least 12.
