It is capable of metabolizing high amounts of malic acid and produces a smooth, aromatic meads that age quickly. 71B-1122 is known for making blush and semi-sweet wines with a 'fruit salad' character. Long-lived aromas are due to its production of esters and higher alcohols. 71B-1122 also softens high acid musts by partially metabolizing malic acid. Alcohol tolerance up to 14% It's best to ferment in 60-85*F temperatures An excellent choice for blush & residual sugar whites, nouveau & young red wines. Also a good choice for late harvest wines.
